This course focuses on the role of nutrition principles across the life cycle within the context of various cultures. Food needs for energy, proteins, fats, carbohydrates, and the regulation of vitamins and minerals will be studied in relation to maintaining a healthy nutritional status. The course is designed to provide a foundation for further study of clinical nutrition and has applicability to the student's own nutritional lifestyle. Open to all students. Offered: Fall
